No Bake Pumpkin Pie
For those times when you just want a quick and tasty pumpkin pie without spending a lot of time putting it together, this is your pie. It's wonderfully delicious and sure to please a crowd!
You'll Need:
1 - 9 inch prepared graham cracker crust
1 - 0.25 oz package unflavored gelatin
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
1 - 14 oz can sweetened condensed milk
2 free range organic eggs, beaten
1 - 15 oz can pumpkin puree (or fresh equivalent)
1. In a room temperature sauce pan combine gelatin, cinnamon, ginger, nutmeg and salt. Stir in milk and eggs. Once everything is mixed well, put it on the stove burner on low heat. Stir constantly for about 10 minutes or until the gelatin has dissolved. Once the mixture has thickened sufficiently, remove from the heat.
2. Stir in puree pumpkin being sure to mix thoroughly. Pour mixture into the graham cracker crust and chill for at least 3 hours before serving.
