Depression Cake Recipe
There are a variety of cakes that were created during the depression era when certain ingredients were scarce. This is one of those. You'll find we also have a recipe here for
from the same era. Try it as well!
You'll Need:
1 cup shortening
2 cups water
2 cups raisins
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon ground cloves
2 cups white sugar
3 cups all-purpose flour
1 teaspoon baking soda
1. In a saucepan combine the water, shortening, sugar, raisins, cinnamon, nutmeg, allspice and cloves. Simmer for 10 minutes. Remove from heat and let stand until cool.
2. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
3. Stir the flour and baking soda into the cooled raisin mixture and mix until just combined. Pour batter into the prepared pan.
4. Bake at 350 degrees F (175 degrees C) for 45 minutes.
