Almond Sugar Cookies
This recipe is supposed to be good for diabetics, as it tries to limit the amount of sugar, but still allow for sugar cookies. You can also substitute stevia or splenda for portions of the recipe.
You'll Need:
5 Tbsp margarine (75g)
1 1/2 Tbsp sugar (18g)
1 Tbsp egg whites (15ml)
1/4 tsp almond extract (1.25ml)
1 cup unbleached all-purpose flour (1.25g)
1/8 tsp baking soda (0.6ml)
1. Preheat oven to 350F (180C).
2. Beat margarine and sugar together in a bowl until it's light and fluffy. Mix in the egg whites and almond extract.
3. Gradually mix the baking soda and cream of tartar into the flour. Roll into 1/2 inch (1.25cm) balls and place them on a non-stick cookie sheet at least 2 inches (5cm) apart. Press down onto the top of each ball to flatten the cookies.
4. Top cookies with a slice of almond.
5. Bake for 8 to 10 minutes until lightly browned. Let them cool for several minutes before removing from pan to place on wire racks.
